1 15 oz can chickpeas,including liquid
1/4 cup tahini or sesame paste
2 tbsps. lemon juice
2 tbsps. lime juice
1 tbsp. orange juice
3 large garlic cloves cut into thirds
1/2 tsp. cumin
Salt to taste
Chopped fresh parsley to garnish
Drain chickpeas,reserve liquid. Put chickpeas into blender or food processer. Add tahini,citris juices,garlic,cumin,and 1/4 cup of chickpea liquid. Blend or process slowly,adding more chickpea liquid if needed,untill entire mixture is
smooth and has consistancy of pancake batter.Season to taste with salt.Sprinkle with chopped parsley and serve with pita triangles.
